Physicochemical properties of astaxanthin

Jul 18, 2022
Crystalline astaxanthin is pink, melting point is 215 ℃ ~ 216 ℃, insoluble in water, fat-soluble, soluble in chloroform, acetone, benzene and other organic solvents.

The conjugated double bond chain in the molecular structure of astaxanthin and the unsaturated ketone group and hydroxyl group at the end have relatively active electronic effects, which can attract unpaired electrons of free radicals or provide electrons to free radicals, thereby scavenging free radicals. Strong antioxidant effect. The structure also makes it easy to interact with light, heat and oxides, and degrades into astaxanthin after the structure is changed. The study found that visible light has little effect on astaxanthin, while ultraviolet light has a great destructive effect on astaxanthin; below 70 ℃, temperature has little effect on astaxanthin, and above 70 ℃, astaxanthin begins to be damaged by heat; at pH 4 Within the range of ~11, the pH value has little effect on astaxanthin, and astaxanthin begins to degrade when pH < 3 or pH > 13; metal ions such as Ca2+, Mg2+, K+, Na+, Zn2+ have little effect on astaxanthin, and Fe2+, Fe3+ , Cu2+ has obvious destructive effect on astaxanthin, among which Fe3+ has the greatest influence.

Astaxanthin exists mainly in free and esterified forms. Free astaxanthin is extremely unstable and easily oxidized. Usually chemically synthesized astaxanthin is in free form. Esterified astaxanthin exists stably due to the fact that astaxanthin has a hydroxyl group in the terminal ring structure that is easy to form ester with fatty acid. Astaxanthin on the skin and shell of aquatic animals, Haematococcus pluvialis, and red yeast shrimp. Astaxanthin is mainly in the esterified state, and the esterified astaxanthin is divided into astaxanthin monoester and astaxanthin diester according to the different fatty acids it binds. After astaxanthin is esterified, its hydrophobicity is enhanced, and diesters are more lipophilic than monoesters; at the same time, esterified astaxanthin will form complexes with proteins, resulting in different colors.
